Creamy Noodles - FEATURE RECIPE FROM MY CLEANSE EBOOK!

When I first created the Karleycucumber Cleanse - before it had any photos or was in a shiny, pretty ebook format, before it was tried and tested and edited a million times, before available on itunes and karleyray,com to purchase ;) - I shared it with some friends and whoever was interested on instagram (hence why i named it after my instagram handle!). 

The recipe that everyone texted me about was this one - the creamy noodles, and particularly the creamy noodle sauce.  I will agree with my friends on this one, the sauce is a banger, and it is super easy to make as well!

If you aren't into raw noodles, you can use it on pasta.  If you're a little wild you could also also use it as a dip for bread or veggies or just smear it all over your body and run in the streets.  Depends how wild you truly are ;)!

Ingredients:
>> 3-4 small zucchinis spiralized OR 3-4 carrots spiralized OR 2 beets spiralized OR ½ 1 bag of kelp noodles, softened - or a multiple types of these noodles mixed together
>> ¾ cup coconut water or filtered water
>> 1 cup raw cashews, soaked for 2 hours then drained and rinsed
>> 1 large garlic clove
>> 1/4 to 1/2 of a large avocado
>> 1 tablespoon lemon juice
>> 1 tablespoon nutritional yeast
>> 1/2 cup cilantro
>> 2 teaspoons curry powder
>> 1/4 teaspoon cayenne
>> 1/4 teaspoon sea salt
>> Handful sunflower or pumpkin seeds for garnish - toasted if you aren't fussed about the whole dish being raw

Directions:

1. In a blender, combine the water, cashews, garlic, avocado, half of the cilantro, curry, cayenne, lemon, nutritional yeast, and salt and blend until smooth.
2. Combine the sauce, noodles, seeds, and additional cilantro together and enjoy!
